Foodie Friday: Chocolate Peanut Butter Whoopie Pies!

Welcome to Foodie Friday, again!! Sorry we took a couple weeks off. It has been a bit crazy around these here parts!

We hope you're all well! :)

For my birthday party I made these AMAZING whoopie pies, and recently I made them again. They're so simple to make and super delicious!


Here's the recipe:

Chocolate Peanut Butter Whoopie Pies

For Cookies:
  • 2 ½ cups all-purpose flour
  • 1 cup whole wheat flour
  • 1 ½ cups unsweetened cocoa powder
  • 1 tablespoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 sticks (1 cup) unsalted butter, at room temperature
  • 2 cups organic cane sugar
  • 2 eggs
  • 2 cups buttermilk, at room temperature
  • 2 teaspoons pure vanilla extract

For Filling:
  • 1 1/3 cup natural organic creamy peanut butter
  • 2 sticks (1 cup) unsalted butter, at room temperature
  • 1 ½ cups confectioners’ sugar
Preheat oven to 400. Make cookies: Line three rimmed baking sheets with parchment paper. Set aside.
In a small bowl, sift together flours, cocoa powder, baking soda, baking powder, and salt. Set aside.
In a large bowl using an electric mixer, beat butter and sugar on medium speed until light and fluffy. Add eggs, buttermilk, and vanilla.  Beat until well combined. On low speed, slowly add dry ingredients; mix until combined.
Drop 1 ½ tablespoons of batter onto prepared baking sheets, spacing 2-inches apart. Bake until set, about 8 minutes, rotating halfway through. When the top of cookie is gently touched, it should feel soft but not wet.  Cool completely on a wire rack.
Make filling: With an electric mixer, beat peanut butter and butter on high speed until smooth. Reduce speed to low. Add confectioners’ sugar; mix until combined. Raise speed to high, and mix until fluffy and smooth, about 3 minutes.
To assemble cookies: Spread 1 to 2 heaping tablespoons of filling on the flat side of 1 cookie. Sandwich with another cookie. Repeat with remaining cookies and filling. Cookies can be refrigerated in single layers in airtight container up to 3 days. Bring to room temperature before serving.

Made it Monday



Happy Monday, everyone!! Isn't that flower lovely?! I snapped that pic this weekend because Brandi's favorite flowers are daffodils and I wanted to capture mine before a frost might take them.

Anyway, here's some of what I've been up to lately:

My mom asked me to make her a lamb hat for a church event so I went out and found this awesome yarn and a really great pattern. Turns out the yarn is a terrible idea for the pattern, but I was able to make the hat using my standard earflap hat and then just did the ears. I think it turned out cute!

Renee asked me to make boppy pillow covers for her, so here are two! The one matches the fabric I used for her baby carrier and car seat canopy! (I used this tutorial/pattern.)




I found this super cute tute to make these sock bunnies and dove into this project. As you can see, I lost momentum after stuffing and some hand sewing. He'll be done before Easter because JJ will be his new owner, but I just couldn't finish it right now. I think I've devised a way to make them with just one sock. If I succeed, that will be for next Tuesday Tutorial! :)

There was a lot of this going on last week and this weekend. Raj and I spent loads of time outside and of course, loads of kisses. He has this sweet face that just begs to be kissed and smushed and loved. I'm not sure how I got so lucky to have a great dog like him, but I'm forever grateful!

Sweet cheeks and baby pics

I love babies and very soon one of my best friends is having one! I did her wedding pictures and they've asked me to do infant pictures, too. I can't wait to meet this little man and shoot photos of his sweet cheeks and their happy family. I've been plotting and planning all kinds of shots to get and here are some of my favorites. I wanted to share these with you in lieu of a tutorial or a top ten because really, who doesn't love babies!

Fleece hat turned slippers

I don't think I can call this a tutorial but anyway I thought I would share with you what I did.


Here is a plain fleece hat, I don't remember where or why we had this hat but it didn't get worn because we all wear homemade and silly/cute hats in this house.


So I flattened it out and laid a pattern out on it. There was enough room for all the pattern pieces plus a scrap of extra.
 Here are the pieces
 Julie is especially proud of these because she "helped" me sew them. Since she no longer takes naps if I want to sew I have to find inventive ways to entertain her so she sat on my lap and I showed her where she could hold the fabric for me.


And then we added some puffy paint to the bottom for some traction.
Ignore the silly cat and airplane... puffy paint isn't easy to draw with ;)


Made it Monday: more robots!


Happy Monday, everyone! Since I've been back from Mexico I've been trying to get some things done and haven't really been able to do that. But I do have one project I can show you now. I made a guitar strap for my friend in Indy. I used my favorite robot fabric (used on another project here) and some red duck cloth. I really love how it turned out and he loves it too!



I hope you all have a splendid week and I promise to be back on the ball with crafting asap. I'm working on a blanket, some baby shoes, some monkey hats, a couple boppy covers, and a few other assorted things. It's like I've got a project in every room!

Made it Monday


Hey guys I hope everyone had a good weekend. We went to Meig's for dinner on Saturday and I worked all day Sunday so I really didn't have much time for crafting but here is what I have been up to.

Right now I am finishing up a hooded cowl for Meig's mom. She likes blue so we picked out two nice blue yarns to use, I think it's turning out nicely and should be finished by the end of the day.



I finished up an I love my state bag for a good friend of ours.


Meig's birthday was last month while she was in Mexico and I made her a sewing machine cover and matching pin cushion. I should have taken pictures before I gave it to her but forgot so here is the cell phone picture I do have.



Well that's what I was able to accomplish the past week. Now I am off to get into something crafty before I get distracted!

Foodie Friday- Banana Bread, Mug Cake

Welcome to our foodie linky party! We would love to see what you've been cookin'.
This week I made 2 things I thought I'd share with you.


First banana bread, I make this all the time but I never use the same recipe twice.


I saw this recipe on pinterest for a salted caramel chocolate mug cake. Is it just me or do all mug cakes taste rubbery? I have tried 3 or 4 different recipes and they have all been fails. I couldn't even finish this one..
