Foodie Friday: Taffy Apple Pizza

Today I'm going to share one of my very favorite desserts with you. It's a Pampered Chef recipe (so you know it's delish!), and it's got the sweet AND the salt going on which is why I love it so!



I had friends over for dinner on Sunday and usually, there are no sweets in my house, or if there are, they last FOREVER. I'm terrible with eating cakes and other sweets. Cookies sometimes will all get eaten if I take them with my lunch, but usually I end up chucking half the baked goods out because I am just more of a salty kind of girl. (I know, I know - it's not normal. But honestly, I ship all my sweet stuff over to Brandi and she eats it for me. Heehee.)

However, THIS DESSERT gets eaten. In its entirety. So...where was I? Friends came over, I made dessert...ah yes. Here is the recipe:


Ingredients:
8oz cream cheese (very soft)
18oz package of sugar cookie dough (I used Pillsbury which was only 16oz and it was a-ok)
1/c packed brown sugar
1/4c creamy peanut butter
1/2 tsp vanilla extract (little known fact about vanilla extract: the real stuff helps with burns - takes the sting out without making the burn worse like some burn creams do - I'm terribly accident prone so I always have real vanilla extract for when I burn myself)
2 medium granny smith apples
1/4c caramel ice cream topping (or real caramel, or whatever caramel-y goodness you want to use)
1/2c chopped peanuts (I used regular sized ones and smashed them with a spatula - I'm classy when I cook)
Large round pizza stone (I only have a medium one so it was thicker, but that's a-ok with me) or equal sized stone/round baking pan/sheet


Directions:
Roll the dough out onto the stone (about 1" from the edge of your baking pan/sheet so 14" on a 15" stone...questions, just ask)
Bake cookie dough at 350 degrees for about 16-18 mins (or until it looks like it's done) and cool for 10 minutes.
Loosen cookie from stone with a knife.

In a bowl combine: cream cheese, brown sugar, peanut butter, and vanilla.
Spread deliciousness onto the cookie.
Peel & core the apple, then slice them about 1/8" slices (as you can see, I did not peel it - I love the peel and am of the belief that most of the nutrients are in that space between the peel and the meat so in my mind it's 'healthier' if I leave it un-peeled)
Dip apples in lemon juice/water solution to prevent browning (questions, just ask)
Arrange the apples on the cream cheese deliciousness on top of the cookie deliciousness.
Warm and drizzle the caramel (unless you use the squeezy kind like I did, no need for warming)
Sprinkle the nuts.
